Back To School {A $500 Giveaway!}

I know for some families the summer is over and their littles are back at the academic grindstone, but for us — school doesn’t start for a few weeks yet.  We are enjoying these last lazy days together, working harder and harder to try and find new things to do.  It’s not been easy, in fact I’ve noticed that this summer was one of our hardest yet for me as a mom.  I was burning the candle at both ends, and combined with life circumstances it felt like the dam was about to break.

As I think about the kids going back to school, and what preparations we’ll be doing, I can’t help but think about what back to school means for ME.  For me, it means having more time to focus on the things I rarely get time for.  Fitness, eating right, thinking about healthy meals.  I think “back to school” and I think FREEDOM.  Anyone else?

So when Nestle approached me* to write about stocking my pantry for back to school, I took one look at the list of products that fall under the Nestle umbrella and I knew this was a good fit.  Why?  Because I’ll be stocking my pantry with not only the items for my son’s lunch, including Juicy Juice (100% juice — booyah!) but I’ll also be stocking it with items that will help my husband and I with our weight loss goal (he only has like 10 pounds to lose and I have a lot more, but let’s not talk about that…).

The kids and I piled into the van and headed to WalMart to stock up.  They were so excited to help me since they saw there was a camera involved.  Cameras make every grocery excursion more fun.  First on my list?  Lean Pockets!

Lunch time has to be quick for me, and Nestle has some great “lite” products — and one of my favs for lunch are Lean Pockets because they are quick and mess-free to eat.  And you don’t even need a fork.  Bonus points!

Next we had to get a weekend dinner staple, and while it’s not necessarily good for weight loss, this is a must for that now and then splurge, and I do think a successful weight loss program can withstand (and requires) some “in moderation” now and then.  Our fav? Stouffers Lasagna!

As we went up and down the aisles picking up goodies on my Nestle shopping list, we finally came to my favorite aisle.  You know it baby — the dessert aisle.  First I grabbed one of these in each hand:

I absolutely LOVE Edy’s.  Our WalMart carries Edy’s No Sugar and the Edy’s Yogurt Blends, so that I can have a little in moderation and keep to my diet.  YUM.

A good food to have for back to school would be bananas. They are quick and easy if you are on the run and they give you some often much-needed potassium.

I have a very picky lunch eater so it is hard for me to be healthy. I try to get fruit in every lunch box cause that is an easy way to get a little bit of nutirition into her :)

i love crock pots, especially for the fall and winter times! i try to include a pork tenderloin or chicken, or occasionally beef tips so that's just one less thing to worry about when i get home! then i try to do a frozen veggie or something that can be steamed quickly, and voila! dinner is served :)

(and skinny cow desserts are delicious! good choice!)

I have to say that some of the easiest ways to keep meals healthy is to find fruits and veggies the kids/parents will eat. I also believe that if you start off with the “healthy” foods from the very beginning…the more likely they will continue to be enjoyed!

I also am a HUGE fan of the crock-pot and Wal-mart roasted chickens!! YUMMY! :)

Overall, if you, as parents, set good examples when eating…your kids will tend to follow. Especially if they don't know any different!!!!

My best trick for the BTS menu is using the grill…a LOT…it also saves on cleanup of pots and pans!

One of our favorite “busy back to school” night meals is frozen meatballs in the crockpot with marinara sauce. We use these to make simple meatball subs. (Add some mozzarella to the sandwich…yum!)

This is great for soccer night…

With school and all the activities starting back up, I NEED quick and easy!! I am a fan of the 45-calorie Sara Lee bread, good for PB&Js on the run! And most definitely, FRUIT!

I hear ya on the freedom. I can't wait until school starts next week. I am really losing my mind right now. ;p

Mmm…99% fat free ground turkey stuffed peppers: brown the meat, toss in a (cooked) boil-in-bag brown rice, add some onions, seasoning smorgasbord, 2% milk mexican cheese shreds, 1/2 small can of tomato sauce. Stuff those peppers! Bake them for 35 minutes at 325 degrees. Take them out, split in half. Sprinkle them with more 2% shredded cheese, and pop them back in the oven for about 5 minutes. Great for stretching meat, getting the whole grains & veggies. We love this meal!

Wow, we could really use this! With five kids our grocery budget seems to be less and less sufficient. A healthy meal? That's tough.

I love to eat a turkey and pepper jack cheese sandwich on whole wheat, toasted, with spinach and guacamole. Wholly Guacamole sells 100 Calorie packs, and I don't even use the whole packet on the sandwich. I buy Healthy Choice natural Turkey and Sargento cheese, which is all-natural. So, I'm not sure about calories and fat, but I feel like it is good because most of the food is minimal to no preservatives.

My kid loves some chicken fingers…. but dangit- those fried foods. Shake and Bake baby…. shake and bake. On busy nights, I make shake and bake chicken fingers with green giant steamers broccoli and cheese and the creamed corn that comes frozen in the tube.

Healthy Back-To-School Option –> not all of these at once of course :) –>
* turkey rollups with 100% whole wheat tortilla,
* propel instead of juice box,
* light string cheese,
* 10 walnuts or almonds,
* small bag of kashi granola and carton of milk,
* lean beef jerkey,
* frozen gogurts,
* steamed edamame (if they have a microwave),
* packet of tuna + seasoning,
* archer farms organic instant oatmeal (if they have hot water)
* fruit salad

Healthy and low fat back to school meal?
A turkey wrap, baby carrots and raisins. A turkey wrap is easy to make. You need a flour tortilla to start. Layer light mayo, turkey, lettuce leaf. Roll tightly then slice.

Corn tortillas, chicken, cream cheese, red onion and some enchilada sauce…. Layer like a lasagna. Bake in stoneware to absorb moisture.

Since we have an older child, we try hard to include him in all meal preparation. I find that, as far as healthy cooking is concerned, the simpler, the better.

Instead of chips, we slice up enough veggies to store in baggies for 5 days worth of school.

We also make sure he has a lot of fruit.

He drinks milk and water like it's going out of style, so that makes it easy.

As for the main part of the meal? Simple sandwiches with cheese and meat. He can make them himself and they make him happy.

For after school, he'll usually grab a Lean Pocket and more fruit…And likely chocolate milk.

I hope you pick me. My sister's a school teacher in a bad part of Dallas. I'd like to give her the card so she can use it to buy supplies for her kids that can't afford them all.

Tonight for dinner, I made a WW Crock Pot Chicken Stroganoff and it was the bomb and the kids loved it. Even better, I pulled it all together in les than 5 minutes mid-morning, when life in't too crazy, threw it in the crock pot, nd it was done right at dinnertime. Perfecto!

Drink, drink, drink!! WATER, that is! When I feel hunger pangs, I drink a full bottle of water first before I find a healthy snack. Then I try and finish a bottle between bites. Then I drink another after. I have found that it helps me slow down the eating and it helps me feel fuller.

I love grapes and so do my kids a great twist on these is putting them in the freezer. They are sweet and so I feel like they are a real treat. My kids love gogurts and I freeze these too and they make great after school snacks. My kids like broccoli aswell probably the only vegetable they don't turn their noses up at so I use it a lot. I love the steamers because then I always have left overs and then I put the leftovers in chicken dishes with a lite alfredo sauce and serve over whole wheat pasta. It is quick and healthy.

I've been thinking about this lately as school starts NEXT WEEK! I am going to use the crockpot a lot this year. My favorite dinner in the crockpot is chicken breasts with FF Italian dressing. Put it on low for the day. Easy-peasy!

We use the grill a lot. By doing so, we are cutting back on the amount of fried foods we consume. You can put just about anything on the grill. The natural flavor you get from the grill lessens your desire to use tons of salt and other unhealthy seasoning.

cdziuba@aol.com The thing I've found that works best is to keep cut-up fruits and veggies front and center in the refrigerator, along with a Yogurt dip for the fruits. My whole family grabs the healthy snacks because they're the most easily accessible. And don't buy junk food! If it's not in the house, you can't eat it.

I like to cook meals in the crock pot so my kids are getting a good home cooked meal without a bunch of preservatives and sodium. We always have fruit and veggies. My kids LOVE fruit. We always have bananas, grapes, blueberries, and strawberries (when in season) on hand.

My son likes wraps. You can make them with any type of lower fat lunch meats such as turkey and add some veggies. I use the high fiber tortillas and they are yummy as well as healthy!

As for meals, I don't cook LOL Hubby does! BUT having fresh fruit and veggies cut up and ready to go is always great for the kids to grab a quick healthy snack after school and for things to munch on before dinnertime. Keep a bowl at the front of the fridge and one out on the counter or table where they do homework.

The crockpot is your friend. My kids are back in school but I have a home daycare and after fixing food for little people all day I'm not in the mood to cook in the evenings. So I try to get the crockpot going as I'm making lunch, we eat a whole lot healthier this way.

I love the Mandarin orange snacks that come in the individual containers. Pop those in the freezer and then take them out before they completely freeze up. The oranges get nice and cold and the juice tastes like a healthy freezee.

The Stouffers green peppers are nutritious and fairly low fat with a generous helping of fiber. Nestle also makes Lean Cuisine which has some really good food options.

Back to school meals… Hmm… Granola bars are always good (just watch the sugar), “peelable” fruits such as bananas and oranges, and the classic PB&J or turkey tomato and cheese sammy. awesomely delicious!

My best ideas for healthy meals are ones that include lots of vegetables. My favorite way to prepare veggies are to roast them in the oven. Drizzle some Extra Virgin Olive Oil over them and sprinkle a little Kosher salt on top. Bake in a 400 degree oven for 10 minutes. This is a super delicious way to get veggies in your diet. Veggies I love to roast are: broccoli, carrots, red peppers, etc. My kids love roasted veggies, and once they start school I'll definitely pack them in their lunches.

Wow!! What a great giveaway! I try to substitute whole wheat for pasta and bread items. I also stock up on apples, celery and dip, grapes, etc so that we'll have those on hand and hopefully grab those instead of chips or something even worse!! We don't buy soft drinks. That way it's not even an option. We get them occasionally when we go out, but not having them at home limits our intake!! Thanks for such a fabulous giveaway!! My husband is in the military and has been gone for 20 months!! He'll be coming home on September 15th – yay!! My four year old son and I would have so much fun using this to shop for daddy – and buying groceries that we know he likes to stock up for his return!! :)

To save time I make a double batch of a healthy meal we love, like turkey meatballs with tomato sauce, or vegetable soup, and I freeze half of it so I have a quick meal on hand for a busy day.

When I think of back to school snacks and meals the first thing on my mind is how efficiently they will keep the mind and body going. A helpful too I discovered is http://www.nutritiondata.com. I have learned so much about the nutrition profile of a meal! I think a great breakfast is very important start to a really productive day. I try to prepare something with eggs since they have so many things in them that are so good for a person and then add fruit on the side and a tall glass of the purest water I can find. For snacks I like to keep foods on hand that will supply lasting energy. Walnuts, for example, have omega 3 brain food in them! Dark chocolate is really good for the brain, I have read, and so delicious so it is a fun treat sometimes that we enjoy. A usual dinner for us consists of veggies, fruit and a lean meat or fish. It is a snap to prepare and helps us feel really satisfied.

We ALWAYS have a fruit at every meal….it's usually pineapple, mandarin oranges, a banana, some frozen buleberries, or applesauce. My kids know that it's a required meal item so they've learned to enjoy the “healthy stuff”.

We've been rocking the crock pot lately. I love to make crock pot turkey chili and whole roast chicken in the crock pot. I also premade and froze a bunch of things like a lasagne and some turkey meatballs that we've been eating lately. :)

I try to sneak in veggies and grains whenever I can. I put shredded carrots into my ground turkey, and my brown rice. I put oatmeal, and flax into my meatballs.

I'm a Lean Pockets fan, myself, but for my kids I make pb&j's with 100% whole wheat bread to give them extra nutrition, protein, and fiber without extra sugar. I have a sandwich cutter from Pampered Chef that makes them look like Uncrustables, which my kids love. It also keeps the jelly from spilling out!

I love quesadilla casseroles. Canned black beans, shredded chicken, salsa and low fat cheese get mixed together. I freeze this prep and then thaw it the day we plan to eat it, bake it when we get home at 375 degrees for twenty to thirty minutes. It's delicious, high protein, low fat and so easy!

One of my favorite easy and healthy meals starts with a store-bought rotisserie chicken. I buy mine on Sundays at a local grocery store's special promotional price of $4.99. Remove enough of the meat for your family from the chicken carcass. Refrigerate the rest of the chicken. Remove all skin and bones from your portion of the chicken. Chop chicken into small pieces. A great healthy and low-fat meal, that is also back to school friendly is sandwich wraps. Instead of doing two pieces of bread, you assemble the sandwich in a whole wheat tortilla and wrap up like you would a burrito. My favorite fillers are turkey or chicken meat, lettuce, tomato, and avocado. Yummy!

At our house, we alternate a big dinner with an easy, light, and easy-to-fix dinner the next night. So, we might have roast with onions, potatoes, carrots, & rolls on Monday; and then on Tuesday we have a soup night. We heat up bowls of our favorite soups, and have a green salad with all the goodies – like celery, carrots, cauliflower, mushrooms, olives, croutons, sunflower seeds, etc. Helps the budget, breaks the monotony, and makes me feel that we aren't always eating huge meals.

I keep lots of fresh fruit handy for a quick snack. Also baby carrots, celery sticks, string cheese and yogurt are always in the fridge. I've got grapes and blueberries in the freezer and my grandkids prefer those little frozen treats to ice cream!

I like reusing leftovers. I buy the already cooked rotisserie chicken at the store for dinner. The next day will make sandwiches or even add color bell peppers to make fajitas and wrapped them with tortillas. I stock the fridge with lots of fruit for snacking.

I've found that I can cook a lot healthier and more low-fat if I cook our main meals in my crockpot. If you use a lot of spices, you can make a low-fat meal tastle delicious in the crockpot because the flavors have a long time to cook and combine with the other ingredients. One of my favorite meals, that is perfect for a lovely back-to-school Autumn dinner, is Vegetable soup. It is delicious in the crockpot!

I try to keep bagged salads (pre-washed) and fresh fruit and veggies that are easy to eat raw. I can grab a snack of carrots and peanut butter or have a quick salad for lunch easily and still be healthy about it. I tend to eat poorly if I have to grab something quick, so veggies are a great option for me.

Healthy back to school? A big bowl of salad with any veggies that we have in the fridge cut up and laid out on the big cutting board–the nicer it's arranged, the more my boys eat–i have no idea why. Usually we have grape tomatoes, cucumber, carrots, red pepper, and throw in some hard boiled eggs, chopped up ham and then I make a few baked potatoes. They like it cuz they get to pick whatever they want on their salad and potato. I like it cuz it's easy!

My kids don't like to eat a typical sandwich lunch, so I like to pack them little containers of various things. I always pack one fruit and one vegetable and cut everything up into small pieces, often using mini cookie cutters for interesting shapes. I cube cheese and include crackers. My kids also really like pepperoni cubes. I spend one night doing all of the prep and putting everything into containers which makes for quick grab & go lunches.

My family loves the frozen brown rice from Trader Joe's. It only takes 4 minutes in the microwave and you have perfect brown rice. I use that as a base for stir-frys or use it as a healthy side dish for chicken.

My best advice is use turkey meat instead of hamburger or sausage. My kids (and husband) don't taste a difference and it saves money and calories! We love tacos made with ground turkey- they are quick and simple but still yummy and fun!

For me, breakfast for dinner is a great meal that is easy and back to school friendly. Omelettes provide a nice protein source and packed with vegetables and cheese are a great way to get many of your foods in one. Use Egg Beaters and you can do it in a low fat/low cholestoral approach.

Lovin' on some green stuffed pepper soup!

Ground Beef, diced tomatoes, tomato sauce, rice, green bell peppers, 2 beef bouillon cubes, brown sugar, salt, pepper, and soy sauce. I always make my in the crock pot so it can simmer all day. Make sure you add enough water so it doesn't get too dry. YUM!

Add wheat germ to any breakfast cereal! This is a great source of folic acid, and it doesn't change the flavor of anything. even sprinkled on top of bananas with peanut butter, it can pack a little more nutrition into a snack. every little bit helps!

Today's tip – make your own b-b-q chicken pizza. Buy pre-made pizza dough, spread in cookie sheet, brush with oil, top with barbeque sauce and chicken. Bake at 400 for 18 minutes. Sprinkle red pepper and pineapple on top. Yummmmmy!

A delicious, healthy and easy school year dinner is chicken soft tacos. Start with a purchased rotisserie chicken. Remove skin and bones from a meal size portion of meat for your family. Warm small whole wheat flour tortillas in the microwave. Place meat inside each of the tortillas and top with chopped lettuce, chopped tomatoes, and chopped onion. Top tacos with salsa. A quick and easy meal is to put a roast in a crock pot in the morning and when you come home from school/work whip up some mashed potatoes (or add the potatoes to the crock pot in the morning) and dinner is ready. Not a lot to do when you arrive home just a few last minute things like grabbing some frozen peas and heating those up.

I like baking off a bunch of chicken breasts, and then having the meat in the frig. You can slice for a sandwich, cut it into strips for finger food eating, shred into chicken salad – lots of options. Pair up with some fresh veggies – carrots, pepper strips, etc – and you got a great lunch.

We make healthy subs .. lean turkey, lots of veggies on whole grain. My kids love veggies in ranch type dips. And they love apples in peanut butter. We eat this way when we have to be everywhere all at the same time. LOL

Take a purchased rotisserie chicken, remove the bones and skin and put aside enough chicken meat to serve your family tonight. Refrigerate remaining chicken for other days meals. Stir in several tablespoons of teriyaki sauce or soy sauce, (or to taste) and mix well. Add your reserved chopped chicken and 1 cup previously cooked left-over brown rice per each 2 family members. (If you're cooking for 4, you'll add 2 cups already cooked rice. This is a great recipe to use left-over rice.) Stir the mixture over medium-low heat until heated through. Divide equally among plates and serve to great acclaim. You don't have to tell them it was oh-so-easy and good for them also! Enjoy!

Something healthy I do for my families lunches is make sure there is lots of variety – a real peach one day, and then a peach cup the next. I also make sure to use whole wheat bread. Thanks for the chance!

My biggest piece of advice for healthier eating, which can be included in school lunches, are cut up veggies and fruit. Now fruit obviously goes bad quickly once it's cut up, so you'll want to do that the day you're going to eat it, but veggies can stay good for a few days after being cut up. My best tip is to cut up all your veggies for the school week on Sunday night. It saves time when you're packing school lunches, and it helps you and your kids to eat healthier when you just want something to munch on!

Instead of adding eggs to burgers/meatloaf, I add homemade baby food (pureed carrots, squash, spinach). It give s a great flavor, keeps it moist and is healthy!

We make salad our meal – We grow many types of lettuces in our garden. Amazing how much better veggies and herbs are from the garden. I have an herb garden right in my kitchen window. Our salad is full of flavor! We keep fresh veggies in stock so we are always ready. I can never be without baby carrots -the fav here. Salad is my family's fav meal. It's so quick and so low fat and healthy. Gives my kids what they need to have energy.

When it's hot you don't want to heat up the kitchen with cooking. Here's the solution for a heathy, delicious, cheap, quick and easy dinner: Chef's Special Salad ! In a very large family-size salad bowl, place 1 package of bagged salad, 2 chopped tomatoes, 1 small chopped cucumber, 1 small chopped onion, and 2 cups left-over chopped rotisserie chicken, Toss to mix well, Sprinkle 1/2 cup shredded low-fat cheese on top of the salad. Serve salad with low-fat or non-fat dressing. Add some fresh fruit for dessert as well as non-fat or low-fat milk or your favorite low-calorie beverage. It's quick, easy, healthy, and delicious! Enjoy!

I love to buy about 3 different kinds of fresh fruit (usually grapes, strawberries, and raspberries), throw them all in a huge tupperware, and have it ready to eat or dump into smaller tupperwares anytime I need to go somewhere. It's fast and easy and healthy!

My son loves fruits and veggies, so my tip is to buy like a small bag of carrots and split them up to do your child all week….not only is it cheaper but your job for the week is done if you do it all the night that you get it. It's really convienent and easy. If you are like me and count calories…my son now goes through walmart saying wow mom this has a lot of calories, and he's not even 8 yet. It just really cracks me and others around me up, but they need to learn while they are young, that putting the weight on is easy but trying to take it off sucks!!!

we do roll-ups for lunches: tortilla, meat, shredded veggie, cheese, some kind of spread (mayo, mustard, dressing, hummus…). throw in a piece of fruit, and all the food groups are covered! anything else we include is just icing on the cake… so to speak. :)

My kids like spaghetti very much. It's pretty easy – I just use jarred sauce, which you can usually find on sale. My dh sometimes even makes meatballs! (He's an avowed carnivore!) Add a salad & maybe some garlic bread, & it's healthy & quick.

We always have healthy snacks on hand – carrot sticks, raisins, etc – it's so much easier to eat healthy if it's not an effort. If the healthy snacks are already prepared, there's less temptation to go for something easy but bad for you.

When school's in and activities keeping us on the goal – We whip up our healthy pizza .. whole grain crust, fresh tomatoes and veggies, low fat cheese. And of course lots of fresh herbs. My hubby makes the best pizza I've ever had. So I especially love this quick meal because he makes it.

I use the slow cooker often to create quick homecooked meals. I put my ingredients in early in the day. It cooks while I am busy busy busy. I love whole chicken, roasts, or soup the best. Lots of veggies in too.
